Toilet Training Unprompted

How do you encourage your 3 year old to go to the toilet unprompted? My toddler is inconsistent and after I toilet trained her at 2 1/2 she still kept pooing her knickers. I got so despondent that I put her back in pull-ups, especially when we went out.

I've now been in for a week because of my older child being ill and have tried to toilet train her again, she has only worn a nappy at night. Now she doesn't seem to be bothered about going to the toilet by herself and doesn't go unless prompted. HELP!
